Deepawali – “Festival of Lights” An ancient Hindu festival to celebrate the triumph of light over dark and good over evil. This year Diwali will be celebrated on Wednesday November 11th, 2015, this is one of the most major holidays in India. Although, it’s not just celebrated in India it’s actually celebrated by millions all over the world.

No festival or celebration is complete without delicious food and sweets.  This Diwali and New Year’s be sure to check out these great 10 recipes that is guaranteed to please the whole family.

Diwali is celebrated in many different ways, but the most traditional ways that people celebrate is by lighting lamps and clay diyas, fireworks, music, decorations, delicious food and sweets. Rangoli patterns are decorated inside and outside created with colorful rice, sand and colorful flower petals. These colorful geometric rangoli designs are created for the entrance ways, living rooms or courtyards of houses that encourage and welcome the goddess Lakshmi Mata.

Diwali is one of the most lavishing, fun, full of tradition, bright, colorful and exciting festivals celebrated around the world. I find Diwali to be very similar to the traditional holiday “Christmas” which is also celebrated by many around the world. Diwali is all about exchanging gifts and sweets, greeting friends, family and loved ones with Diwali wishes, indulging in lavishing festive meals, buying and wearing new clothing.

For some of us the next day after Diwali, is Gujarati New Years also known as “Bestu Varsha”, “Nutan Varsha”, “Padwa” and “Saal Mubarak”. We celebrate the year 2072 this year, Gujarati’s all over the world will celebrate this day to mark the beginning of a new year and put all their worries behind, forget the past and prepare to welcome the “New Beginning” of a new year.

Corn Flour Spinach Onion Pakora

Corn Flour Spinach Onion Pakora | Special Corn Flour Spinach Onion Deep Fried Fritters

image

Dull rainy days always make me feel a bit down…can’t go out since it’s too wet and cold and staying in can get boring. That’s when these totally scrumptious, delicious and quick preparing Corn Flour Spinach Onion Pakoras (fritters) come handy. I’m not one to always deep fry, but some things just taste much better when deep fried ….like Pakora! 🙂 Enjoy these divine little fritters with your favorite sauce and a cup of tea (chai) and trust me ….the rainy day blues will disappear.

Corn Flour Spinach Onion Pakora are sinfully delicious little fritters made in a combination of corn flour, besan (gram flour), spinach, onion and flavored up with a combination of dried spices and deep fried till nice and golden brown.

image

Pakoras are really famous in Northern Indian, they’re made in many different variations of vegetables, spices, veg or non-veg and batters. Normally, all pakoras are deep fried till nice and golden brown and served as a snack or appetizer. They are considered to be a quick fast food item and are very regularly found sold on side street food trolley, in restaurants and grocery stores.

I won’t say that these are  a healthier version since I’m using yellow corn flour, but yes ! one thing for sure that they taste awesome. The combination of yellow corn flour, besan, spinach, onion and spices is a total WOW!. I’ve made different pakoras before that are either completely traditional Gujarati or traditional Punjabi.

Some of my all time favorites are Methi Palak Pakora and Methi Kela Na Bhajiya with my favorite chutneys Green Coriander Chutney and Mint Coriander Chutney.

    Double Decker Sandwich

Double Decker Sandwich | Layered Sandwich with a nice Spicy Cilantro-Coriander Peanut Chutney

    image

The ultimate layered vegetarian sandwich made with boiled potatoes, tomatoes, cucumber, loads of cheese and a super delicious Spicy Coriander (Cilantro) Peanut Chutney all layered into white rye bread and toasted till nice and golden brown. Truly, does sound divine right! Well it absolutely is, this sandwich loaded with tons of authentic flavors and scrumptious mouth-watering sandwich that is not to be missed.

    image

I’ve made many different versions of sandwiches, but by far this is my favorite and not just mine, but also my families. Double Decker sandwich is the perfect lunch or dinner sandwich. It’s absolutely filling so it’s a perfect idea for a nice quick and easy dinner.

A vegetarian sandwich is unconditional, any vegetable of your choice goes well and to top it off cheese makes it completely delicious. I had decided to give this sandwich a bit of a twist by making a special chutney, dip or spread whatever you want to call it. It’s a spicy coriander (cilantro) peanut chutney, this chutney absolutely changes the complete taste of the sandwich. Instead of using it has a spread I had drizzled it all over the vegetables in the sandwich and then grilled it on my Panini grill.

Cheese is a weakness for me, I just love it and some of my all time favorites cheeses to have stocked up are Pepper Jack Monterey Jack with Jalapeño Peppers, Mild Cheddar, Swiss Cheese, Provolone and Colby Jack Ripen Cheese. They taste the best on any sandwich.

    image

Being a vegetarian I’ve found that many fast food joints, sandwich stores or restaurants really don’t indulge into making creative and interesting vegetarian sandwiches. It seems like it’s always the same old vegetable sandwich with some tomatoes, cucumbers and lettuce with cheese or a frozen veggie patty that is warmed up in the microwave and stuff into the sandwich. This is absolutely not fun or tasty! Tasty vegetarian sandwiches don’t always have to be boring and that’s why I think that the best sandwiches can be made right at home just the way you like it with your own choice of topping. 🙂

My son is a picky eater, I find that veggies is one thing that is difficult for him to accept. He will eat it ….but surely takes his time. So, for me this was a challenge but I wasn’t going to give up so I decided to make wraps and sandwiches with veggies but in such a way that he wouldn’t even know that I had vegetables in his sandwich. Mashed vegetables with cheese and light flavoring it was a super hit. He now enjoys sandwiches with vegetables and chutney but has to have loads of cheese.

Pineapple Pear Avocado and Orange Juice Smoothie

Pineapple Pear Avocado and Orange Juice Smoothie – The perfect start to your morning!

    1438189715660

The perfect drink to start your day has got to be a nice tall glass of freshly blended Pineapple Pear Avocado and Orange Juice Smoothie. Nice ripe bosc pear , ripe avocado and frozen chunks of pineapple with a huge splash of orange juice all blended together into a nice smooth smoothie. What more do you want? A complete refreshing, tasty and healthy drink to energize your morning.

    1438190672250

I love my morning tea the really Indian Chia, who doesn’t? 🙂 But, this week I had decided to change things up by starting my day with a nice glass of freshly made smoothie or juices. So far I’m enjoying it a lot. First, thing in the morning the body needs to be energized and I find that tea (chai) helps me wake up, but doesn’t always make me feel refreshed. With all the different smoothies that I’ve been making the body not only feels refreshed, but make me feel like the body is getting cleansed at the same time. A wonderful feeling! 🙂

Smoothies are a regular in my house, I pack a huge bottle everyday for my husband so he can enjoy that same freshness for an early morning snack or a great afternoon snack. After school, my kids get to enjoy the same great tasting smoothie. I honestly will share that some days some of the smoothies don’t taste the greatest due to the nature of the fruit or vegetable. We have learned to put all that bad vibe aside and have started just to enjoy the goodness of these smoothie. Yes! also my kids enjoy it a lot …sometimes to the point where their want more and more. Makes me feel good ! 🙂

Pineapple Pear Avocado and Orange Juice Smoothie is a super simple and totally healthy drink. It’s quick to make, but there is one little secret that I makes this smoothie super tasty. Be sure to use only ripe “Bosc Pear” and let your “Avocado” ripen up …not to the point where it turn dark brown inside, but till it’s nice and soft on the outer core, and green on the inside. I used frozen pineapple chunks in this recipe and avoided the ice cubes and added a huge amount of orange juice to balance out the sweetness. This smoothie is a bit sweet but more over to the tangier side and the color is a nice mellow yellow.

Be sure to try it out and let me know what you think. Also check out some of my other wonderful smoothies to start your day off; Mango Pineapple SmoothieKale Mango Berry SmoothieSummertime Mix Fruit Smoothie and lots more at Smoothie/Juices/Drinks.

    Chocolate Chip Muffins

Instant Chocolate Chip Muffins | Pressure Cooker Baked Chocolate Chip Muffins

    image

I love anything that has to do with Chocolate and so does my family. I really mean anything ! 🙂 Chocolate and me are best friends, I could litterly eat it morning, afternoon and night with no problem and no guilt. That goes for everyone in the family and trust me I’m not exaggerating. 🙂

    image

We’ve all heard of Betty Crocker ….those instant pre-packaged baking goods are wonderful when in a rush. I always keep some on hand, there’s days when I have no time to bring ingredients at room temperature and Betty Crocker is there to help me! Love it.  (No I’m not branding or advertising for Betty Crocker, just love the product). These Chocolate Chip Muffins are instant, 3 minute mix, bake and serve.

The best thing about some of the Betty Crocker products is that it takes only water …..yes “water” and that’s why it’s called instant. I love to bake from scratch, but some days I’m looking for the cheat version easy way out ….we all need a break some days. A lot of the Betty Crocker packages do require eggs as an added ingredient, but I like to bake egg less so the water substitute is the best.

    image

Recently, it’s been extremely hot and when the temperature is rising I’m in no mood to turn on the oven to bake. That’s when baking with a pressure cooker or steamer comes handy (click the line to show you an image of my steamer that I used to make these delicious muffins). This Aluminum Idli/dhokla steamer was given to me by my mother-n-law, which has been used extensively to make many wonder delicious mouth-watering dishes. Thank you MIL 🙂

Wondering how it works, well its super simple all that’s need is pressure cooker or a steamer pot. Put about 1 1/2 cups of salt (regular salt) in the bottom of the pot and place a flat ring on top of the salt, cover and let it warm up on the stove on medium heat. That’s it !  When making small batches of baking goods, some times it’s not always worthwhile to turn on the oven…try this out it guaranteed to work and results are phenomenal.

    image

When I started to make these muffins I didn’t have a muffin tin that would fit right into my pressure cooker, so I brought out my good old handy-dandy desi (traditional) “varki” or also known as “katori” (traditional stainless steel little bowls). I line them with muffin liners, poured the batter and baked them. Woala !!! ready soft, warm, delicious Chocolate Chip Muffins.

This is a great quick fix recipes for the non-experienced bakers, or bachelors that would like to try out a new way of baking instead of the not trying it out at all.

Hope you enjoyed this recipe, be sure to check out some other wonderful recipes: Eggless Chocolate Cupcakes with Chocolate Buttercream FrostingCarrot Kheer -Gajar Dhoodh Pak and Nutella Cocoa Milkshake.
