Chori-Dhokli – A Gujarati Delicacy (Cluster Beans Curry with dumpling) It’s a very comforting and filling dish that can be made in many different versions.

Bhindi Kadhi – Bhindi kadhi also known in Gujarati as “Bhinda ni Kadhi” it is a thick, sour, sweet and spicy yogurt base soup. It’s the perfect dish on its own ….it goes well with roti, plain paratha or rice.

Punjabi Chole is a North Indian style Chick Peas curry. It’s a combination of spices sauté in a nice onion/tomato gravy and simmered in chick peas (Chana).  This is an easy and simple cheat recipe. I have used canned chick peas, ready Chana masala. This super simple and quick recipe it’s a bonus for bachelor or beginners to the cooking world.

Pav Bhaji another famous street food of Mumbai. This dish is made of mashed up boiled vegetables sautéed in tomatoes, onions, garlic, masala (spices) with dollops of butter and garnished with fresh coriander and chopped onion and served with toasted/buttery buns (Pav). The tangy, spicy taste is absolutely delicious.

Red Thai Curry is one of my favorite Asian dishes it goes so well with White Jasmine Rice. Red Thai Curry has a nice amount of spices which is not overwhelming or overly heavy. It’s got a nice blend of colorful vegetables, tofu in a vibrant reddish/yellow sauce that can be made fairly thin, to be served in a soup-style dish or little thicker to be served with your favorite noodles or rice.

Mattar Tofu in a White Gravy is my healthier version recipe made in a onion-cashew nut gravy with green peas and tofu. Infused with mild-flavors, creamy, light, easy and quick  to prepare and a completely heavenly taste.

Methi Muttar Malai Paneer (Fenugreek Leaves with Green Peas & Paneer (Cottage Cheese) in a creamy sauce) is an irresistible, delicious and tempting dish you don’t want to miss. The super combination of Methi (fenugreek leaves), Muttar (green peas), Paneer (cottage cheese or chhena) simmered in a flavorful, aromatic creamy, delicious smooth gravy. This is a North Indian based dish that can be made in many different variations.

Creamy Veggie Rainbow Tortellini – Okay so who doesn’t love a good Italian dish? Especially, if it’s multi rainbow colored three cheese Tortellini’s made in a creamy sauce with colorful vegetables. This dish is a complete meal the whole family will agree on. It’s absolutely a great dish ….actually no it’s an amazing flavorful dish. It’s quick and easy to prepare, completely cooked in less then 30 minutes. Creamy Veggie Rainbow Tortellini is a great weeknight dish to prepare or is also a prefect idea to serve up to your guest and impress.

Bhaji Mooli nu Shaak – White Radish cooked with it’s leaves. Don’t toss those Radish Greens ! This dish is simply delicious, very healthy, absolutely easy and simple to make. It’s made with only fresh ingredients, things that are normally always in our kitchen like green chili, garlic, ginger, methi (fenegreek seeds) and salt. Really! that’s it. Super simple and cook time is no more than 20 minute.

Ginger Coconut Spinach Linguine – It’s slightly sweet with a hint of gingery spiciness, this green linguine is tossed in a smooth creamy coconut milk, spinach, ginger, garlic and basil sauce. This pasta is made with an amazing flavor with a combination of Italian and Thai, but the best part is that it’s super fast to make and when all put together is completely out of this world and completely healthy!

Dal Dhokli is made with the same traditional Gujarati Dar flavors, but is infused with a perfect combination of spiced whole wheat atta diamond shaped dhoklis. These spiced dhoklis are added into the dal and simmered til nice and soft and the dal is semi-thickened topped with a nice flavorful mustard seed, red dry chili and thinly sliced garlic tadka topped with freshly chopped coriander leaves.
